Dec/January break in 2025 advice

Hi I am about to book a month in Conil for Xmas and part of January. I have in last three years spent it in Los Alcazares and twice in Mojecar the latter we liked but now feel we need a change, visit and explore a new area. I would like to see Cadiz. We have seen most of the Med coast of Spain.We are not party people so like quiet but with decent food. We are British living last 10 years in the Charente France. So will be driving down.
Is this period a good idea at this time, what weather can I expect..... I hope much the same as Mojecar. But any useful info and advice you can give me will be most helpful.
